Stilton cheese is made by adding rennet and starter cultures to heated cow's milk to form curds. The curds are cut, drained, and pressed into molds to form the cheese. It is then pierced to allow air to enter and develop the blue veins characteristic of Stilton, which is aged for a minimum of nine weeks.
