Why is cow dung a problem and human poo is not a problem?

Cows produce a lot of gaseous waste in the form of methane, that is released along with everything else, and ebters the atmosphere where it acts as a greenhouse gas. In contrast, the human body is quite efficient at picking what it can out of the food and only excreting what it cannot use; much lower amounts of gas are released this way.
