Which foods would a vegetarian have to eat more of and why?

Oddly enough, I know vegetarians who do not eat enough fruits and vegetables! Eating protein and carbs is basic nutrition but for stellar health, eat 5-7 servings a day of fruits and vegetables.

Protein can be lacking in many vegetarians so eat plenty of beans, whole grains and/or grain substitutes, and nuts and seeds (also for essential oils).
