An animal cell would shrivel up when placed in a solution with high salt concentration due to osmosis. Water moves from an area of lower solute concentration (inside the cell) to an area of higher solute concentration (the surrounding salty solution) to balance the solute levels. This loss of water from the cell causes it to shrink or shrivel.
