How much water output needed from private well to run a house?

Some people are getting along with only 1 gallon per minute. They use the well to fill a large cistern then pull water from the cistern when needed.

If your well can make 7 gpm or better, you shouldn't need the cistern at all. Unless you want to run sprinklers or irrigate.
