What tools would you use to verify that your new cable meets Cat6 standards?

A multimeter can be used to test that cables are straight-through and not a cross-over. I've used a battery and torch bulb, with two wires as probes, to test cables without any problems. Take care to place each probe on the correct contacts at each end of the cable.
