The gas is being given off as the peroxide oxidizes(kills) living cells in the wound. It kills exposed cells and partly seals off the torn tissue. It also can kill many bacteria that may have entered when the skin was broken, and this can prevent infection from occurring. It will have less effect on the toxins injected by the bite.
