Some are just born bright orange, yellow, or even white. When a beardie blackens it's dewlap (beard) it can be to threaten, or just to show off to a potential mate.
When mine is basking she darkens her whole body to soak up as much heat as possible.
When they turn black it is often a sign that they are angry, usually towards another dragon. I have 5, and one has to be separated because he always want to attack the others. Even in a separate tank where he can see the others he will often turn black and charge at the glass to try attacking the others.
