What did bakers do in colonial times?

They created many things like: Tea biscuits, potato rolls, johnny cakes, sponge cake, hickory or walnut cakes, ginger and molasses cookies, vanilla wafers, mince meat pie, plain cherry and plum pies, spiced currants.... And at days end the baker relaxed with an Apple toddy.
