Muriel doesn't actually say much in Animal Farm and there isn't much written about her, but here are some quotes where she is mentioned:

"After the horses came Muriel, the white goat, and Benjamin, the donkey" (3).

"Muriel, the goat, could read somewhat better than the dogs, and sometimes used to read to the others in the evenings from scraps of newspaper which she found on the rubbish heap" (28).

"Finding herself unable to read more than the individual letters, she [Clover] fetched Muriel. 'Muriel...read me the Fourth Commandment. Does it not say something about never sleeping in a bed?'
