How do you make homemade applejack?

If one lives in the United States, one doesn't make Applejack, since the process used is distillation, which is illegal. Theoretically, one could freeze hard Apple cider, and remove the shush and ice, leaving more concentrated alcohol behind. The ATF considers this the same as running a still, so therefore one should not attempt this at all.
