Chicken, whether used for chicken salad or anything else, should always be cooked until it reaches 185 degrees F. on a meat thermometer placed in the thickest part of the thigh without touching bone. Depending on the size of the chicken, about an hour at 350 degrees F. is usually enough, but if the juices are not running clear, or if the meat is still pink, it should be cooked longer.
