Why does soda freeze when opened?

This is because the carbon dioxide contained in the drink puts it under higher pressure than normal. The higher pressure, the colder it need to get before it actually freezes.

When you open up a very cold container (Below 0oCelsius) then this pressure is released and crystallisation starts. Ice will begin to form.
