When you save a notepad text file for the first time,

just BEFORE you close and exit the Save As pop-up window,

You must check for the "Encoding" down at the bottom, and choose either the (Unicode) or (UTF-8). Only do that IF your text is written in any language other than English. Otherwise, the next time you will open your notes in Notepad, a bunch of several strange symbols will replace your primary written text.
