Beef, Chicken,YOUR MOM , Pork, Turkey either wild or Butterball, Seafood of all kinds including Chesapeake Bay clams, Alaskan king crabs, Bluepoint oysters, Maine Lobsters and octopus, squid, shark, salmon (canned or fresh), tuna (canned or fresh), sardines, anvhovies, sole, halibut, flounder, cod, herring, monkfish, and etc. Rocky Mountain Oysters, Rainbow trout, Brown trout, Brook trout, Catfish, Perch and Bass are all edible. So are crawdads, whitefish caviar, Black caviar from the sturgeon of the Caspian Sea is appreciated in Colorado much like it is in Moscow, Rome, Paris and Sydney. Locally, Coloradan's enjoy a bountiful harvest of Bison, Elk, Antelope, deer, partridge, quail, grouse, pheasant, bear, squirrel and doves. The migration of the Canadian goose is a relevant edible animal. Escargot is edible in Colorado and elsewhere and so are Mescal worms. Perhaps the question should have been reprhased as 'what native Colorado animals are edible'. Alferd Packer would add a few additional delicacies to this list.
