Dairy cheese is is coagulated, acidified, pasteurized, aged milk from cows, sheep, buffalo, or other animals. The coagulant is often rennet, an enzyme from the stomachs of slaughtered animals, so technically, most cheese is not even vegetarian, let alone vegan.
Vegan cheese can be made with soy or pea protein, vegetable oil (such as coconut, palm, or safflower), nutritional yeast, agar, nuts (such as cashews, macadamias, or almonds), tapioca flour, natural enzymes, vegetable glycerin, bacterial cultures, and/or arrowroot.
