A "bread and butter" letter is a note of thanks to a host or hostess after you have stayed in their home as an overnight guest.
The contents of the note would vary depending on a number of things, from the closeness of relationship between the guest and host to the length of stay. It does not have to be very long, but it should be written.
Here are two examples. The first is to a relative. The second is to the parents of a school friend.

I so much enjoyed my week in the city with you and Uncle Delbert! You were very kind to take such good care of me and show me around. I loved the chance to spend so much time with my cousins, too. Thank you for a wonderful visit.
