Hot food should be kept at a temperature of 140°F (60°C) or higher to prevent bacterial growth. If hot food is left out at room temperature, it should not be kept for more than 2 hours. If the temperature rises above 90°F (32°C), this time is reduced to just 1 hour. Always ensure to reheat food to at least 165°F (74°C) if it has been improperly stored.
