How can I determine when beets are ready to harvest?

Beets are ready to harvest when their roots are about 1-3 inches in diameter. You can gently pull one out of the ground to check its size. The tops of the beets should also be about 4-6 inches tall and the leaves should be dark green and healthy-looking.
