How do you get the plate that the flywheel bolts to off a Chevy 350 so you can change the rear main seal?

The fly-wheel bolts to the end of the CRANKSHAFT, There is no plate. Just take a real small screew driver and pry the seal out. Then tap the new seal in place with a small hammer, or go and rent a seal driver to install it. NO BIG DEAL easy job. Just clean it good before you install new seal.
