How much is a 1807 Indian head penny worth?

The first Indian head cents were made in 1859 so you could not have one dated 1807.

If you have an 1807 Large Cent (about 28 mm in diameter) you'll need to have it checked by a dealer because there are many varieties, with prices ranging from about $65 to several thousand.

If you have a 1907 Indian head cent it's worth about $1 in worn condition, $2-3 with only moderate wear.

Anything else is either a fantasy piece or a counterfeit.
