With Mac OS X pressing the Command key (cmd), Shift and 3 keys will capture the whole screen. Pressing Command, Shift and 4 will give you a crosshairs cursor that you can click and drag over the section of the screen you want to capture; or pressing the Space bar will turn the crosshairs into a camera which will capture the window it is over when the mouse is clicked.

The captured images are usually saved to your Desktop in .png format and are named Screen Shot followed by the date and time.

In the Preview application there is a Take Screen Shot option from the File menu which adds your screen shot to your preview document and can then be saved in multiple formats (for example: PDf or Photoshop formats).

In the Utilities folder within the Applications folder is a utility called Grab which offers timed screen grabs and lets you change the cursor image from the Preferences.
