Why do acorns last a long time?

If the acorns are dried than they will be preserved for longer also if you keep them in the freezer or a dry cool place inside a zip lock bag they can last to 9 months. By then it may not be safe to eat them. Acorns contain Tannin which is in the oak and the taste is rather bitter.
