Can you get a new pair of headphones if there stolen and you have a warranty?

Warranties don't cover theft. If you purchased your headphones with a upscale credit card (Visa Gold, American Express, etc.) , the card company may cover theft. Your home insurance would cover theft too, but the deductible is likely to be far higher than the value of the headphones.
