Salmonella can infect the ovaries of healthy appearing hens and contaminate her eggs before the shells are formed. This is the most common cause since more stringent methods of cleaning and inspecting eggs were introduced in the early seventies, almost eliminating the risk of fecal contamination where the bacteria is most commonly found.

Hens infected with salmonella can lay several non-infected eggs to every infected one. As with all meats, poultry and milk, safe handling and proper cooking will drastically reduce the risk of being infected by the bacteria. Keeping eggs refrigerated will slow the growth of the bacteria, while thorough cooking will kill almost all of the rest.
