Sea bass is overcooked if it becomes dry and flaky instead of moist and tender. The flesh should be opaque and easily flake with a fork, but if it appears tough or has a rubbery texture, it has likely been cooked too long. Additionally, the internal temperature should ideally reach around 130-135°F (54-57°C) for optimal doneness. If the fish is significantly above this range, it may be overcooked.
