What color curtains or sheers go with two tone tan and brown walls?

For a monochromatic look use ivory.

For a clean, neutral look use white.

Or use any of the colors you like best, browns tend to be neutral but look best with warm shades, ie. yellows, Oranges, rusts, and reds.
