There are plenty of options. Some simple ones are soup, salad, cereal, rice and beans, or veggie stir-fry. Of course, there are always nuts and seeds for flavor / snacking and fruits for a sweet dessert. Many companies make tons of vegetarian foods (usually out of soy), so you can have a veggie burger, tofu nuggets (they're so good!), and depending on the kind of vegetarian you are - eggs (omlette), milk, cheese, or fish. The staple in a vegetarian diet is Pizza!
