How do you remove a standard transmission from 51 Chevy car?

Undo shift linkage, two choices on this, undo nuts and let linkage hang or pull cotter pins and leave linkage plates attached to transmission.

Then disconnect the drive shaft.

Undo the 4 bolts holding the transmission to the bell housing.

At this point it should just slide out and fall on the floor if you are not careful.
