Although they are fried in vegetable oil, the oil might contain trans-fat. You should be able to ask the restaurant whether or not they use oil that contains trans-fat.

The reason many restaurants use trans-fat containing oil is that it makes the French-fries more crunchy.

French-fries cooked in oil not containing trans-fat should not be bad for your heart. They are fattening though!
