One recipe for creme patissiere (custard cream) is as follows:

3/4 cup sugar

5-6 yolks

1/3 cup flour

2 cups milk

1 piece vanilla (or extract)

1 pinch salt

mix egg yolk and sugar beating it until creamy. add flour and mix until combined, do not work it up.scald milk with vanilla. add milk to egg mixture little by little, stirring well after each addition. Turn mixture back into sauce pan and bring to a boil stirring vigorously. Boil about 2 minutes. Strain and cool stirring occasionally to prevent a crust from forming.

*note: when cool enough plastic wrap placed down on the surface of the cream will prevent a crust from forming.
