Why is cattle-rearing important in the hilly west?

Cattle rearing is important in this area because crops cannot be grown in such hilly terrain. Livestock like cattle are much more advantageous to raise in such terrain than wheat or corn because they aren't apt to flip over on you like a tractor would on the steep hills that often exist in such topography.
