How do you turn off the air conditioner in defrost mode on a 2002 Acura RSX?

Dont worry it is normal

That is a feature built in to the unit that keeps the ac pump lubricated during the winter months, it should only come on while in defrost mode.

I would not recommend disconnecting the air cond pump as it may not work at all when the warmer weather comes back.
