In terms of Physics: The spectrum of visible light that makes up the color that is perceived as pink is absorbed by the outer covering of cattle. Since this light is not reflected back to your eyes you do not perceive the color pink.

In terms of Evolution: there is no biological need for cows to be pink (bright colors don't typically work well for prey animals) so they never evolved to display such a flashy color.
