Difference between sohc and dohc

"SOHC" Means Single Over head Cam and DOHC means Dual (2) Over Head Cam.

Example: on lately Ford Mustangs , It comes with 4.6L SOHC and DOHC Engines, which basically it will tell you whether there is/are 1 or 2 camshafts over each cylinder head.
