Is it safe to remove a nipple piercing before it has healed if you want it to close up?

Generally, I wouldn't, since infections could stay in the unhealed interior flesh and taking out the ring would make the outer skin heal first, essentially sealing in a big old angry ball of infected flesh. Happened to my ear piercings once and had cysts there for years afterward.
