Does your heartbeat slow down or speed up when you eat?

I'm pretty sure it doesn't do either. It just closes the valve to your muscles and slows that blood reception (into the muscles) while the rest pretty much rushes to your stomach and NOT to forget the blood flow to the brain. But if it had to increase or decrease while you were eating, probably decrease, since your relaxing. As Benjamin Franklin said, "... eat not to sluggishness..." something something something.
