How do you know when the temperature of the pan is right to cook pancakes?

When you are making pancakes the start to bubble on top then you flip them and wait about two minutes for them to finish. When you make muffins you check them every few minutes and when the top is golden brown then they are done...make sure by stinking a toothpick in the middle..to make sure it's done.
