How do I determine when my beets are ready to harvest?

Beets are ready to harvest when the tops are about 4-6 inches tall and the roots are about 1-3 inches in diameter. You can gently pull one out of the ground to check its size. The longer you leave them in the ground, the larger they will grow, but be sure to harvest before they become tough or woody.
