What is the importance of headspace in canned products?

The importance of headspace is to regulate the can damage. If the headspace is too great, more space will be expose to microrganisms that will result to poor vacuum packing. Otherwise, if the headspace is too short, the cover will bulge because the product will expand during retorting process.
