The 'table' is to keep the middle of the box from collapsing and coming into contact with the Pizza.
Whilst widely considered to be a strong, dependable item, it has been proven that the pizza box 'table' is in fact flimsy to the point of being completely useless. In a recent experiment, a copy of the 2008 Penguin Guide to Recorded Classical Music (circa 1600 pages) was dropped from a height of approximately 1.45 meters on to a pizza box containing a cherry tomato protected solely by a little white pizza box 'table'. Post-impact, on removal of the lid, it was observed that not only had the 'table' completely collapsed, it's legs had shattered, and the cherry tomato, once ripe and delicious, had been completely squashed, spraying its juicy, seedy flesh around the box. It was thus proven, that little white pizza box tables are of very little worth, especially in environments where large books are freely chucked about.
