First of all you need to field dress it.
* Pluck a tiny bit off the breast, till you can see some skin. * Cut this skin * Cut all the way till breast meat is visible
* Cut either side of the breast bone, downwards, then outwards * Do this bit carefully as the are two bits of breast either side
Then prepare a nice dinner. E.g. Pigeon breast with vegetables, roast pigeon, etc. There are plenty of recipes online. One of my favorites are:
