How does glue stick to things if it doesnt stick to the bottle?

When you squeeze the glue out of it's container, it makes contact with air, therefore evaporating the water molecules and drying it onto the surface of which you are gluing. So the reason why glue doesn't stick to the inside of the bottle is merely because the top is (hopefully) sealed, denying air access to the glue inside, so the water molecules remain intact.
