It should be cooked on or before the third day. Count the day it was bought as day one, the next day as day two, and the day after that as day three.
Beef is pretty good, in that it tells you when it's spoiled. Check the smell. It should smell clean and fresh. If you're not sure, though, throw it out.
You can cook the roast and then freeze it with minimal loss of taste if you wrap it in an air tight package. I wrap mine first in plastic wrap, and put it in a baggie (be sure to squeeze out all the air). Then wrap it again in foil.
