TCS stands for time and temperature control safety.
As of 2013 TCS foods include but are not limited to:
- Milk and Dairy Products
- Eggs
- Meat: Beef, pork, lamb, poultry, fish, shellfish and crustaceans.
- Baked Potatoes
- Heat-treated (cooked) plant food
- Tofu or other soy protein
- Sliced Melons
- Cut Tomatoes
- Sprouts and Sprout Seeds
- Untreated garlic-and-oil mixtures
