It is no fine science - I have found. But from fresh and taking into consideration the thickness and size of the cut - salmon takes about 25-35 minutes to plank.
I have gotten a lot of good tips (and planks) at Superior Planks.
You must also remember to factor in soaking the planks in water (usually - though I did use diluted Bourbon once and it worked very well). Make sure you plank them at least 2 hours otherwise you will be spraying the plank down the whole time of planking - better to soak the plank(s) overnight - that way you always get great the best results.
