Blackened Chicken is basically chicken that has been seasoned with blackening seasoning. It's generally the same seasoning as "Cajun", and there are several variations of it available. It was introduced/made popular by Paul Prudhomme of Louisiana. It can be used on poultry, fish, and pork. Basic recipe for the seasoning is:
freshly-ground white pepper - 3/4 tsp freshly-ground black pepper - 1/2 tsp dried thyme leaves - 1/2 tsp dried oregano leaves
