I have seen 8 foot sunflowers.

There are so many different kinds of sunflowers, you have edible ones, you have those for decorative and also the ones you plant for the wild life. I just planted the TEDDY BEAR, which is a softer fuller looking, 4-5 foot height.
So an average height would be 5-8 foot, this being of your general garden variety seed stock.
Stock seeds planted for food oil does not need height to be a good plant. In fact, hybrids of crops for food consumption not using the stock for food or silage, can be shorter than previous years. Example: the new field corns being planted are for faster growth, shorter, less waste. So a 5 foot stalk of corn, versus 8-9 foot increases your yield per acre.
