Some superstitious people, or people following family traditions, believe there are certain foods to eat on New Year's Day to bring good luck or prosperity in the new year such as foods that represent money in appearance. For example, for green dollars: spinach, cabbage, or other leafy "greens." To represent coins: black-eyed peas, beans, lentils, etc. Since at that time of year in more northern areas fresh leafy greens may not be available, some traditions include preserved cabbage ("sauerkraut"). There are many other traditional foods to bring in the new year depending on culture, ethnic background, and location.
