Croissants are at their best when freshly baked. Freezing is the best preservation; wrap airtight when thoroughly cool and freeze. Good for 1-2 months. (This is straight from Julia Child.) To thaw and serve, set frozen croissants on a lightly buttered baking sheet and place in a preheated 400°F oven for 5 minutes.
